These carrots are easy to make, and are delicious hot or at room temperature. Great as a side dish any time of year, the balance of earthy, sweet carrots and fresh citrus flavor is sure to win over even the pickiest eaters.

Roasted Organic Carrots with Orange

Prep Time: 10 minutes
Cook Time: 20 minutes
Total time: 30 minutes


  • 2 pounds carrots, unpeeled
  • 3 Tbsp Olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 teaspoon orange zest, grated
  • 2 tablespoons orange juice, freshly squeezed
  • Sea salt, to taste


1. Preheat the oven to 450°F.
2. Remove the tops and scrub the carrots with a vegetable brush. Cut the carrots in long diagonal slices, or, if they are small, leave them whole. (You want fairly uniform pieces about ½ inch wide so they'll cook at the same rate.)
3. Place the carrots on a sheet pan, drizzle with the Olive oil. Sprinkle with kosher salt and freshly ground black pepper. Toss well, and spread out in one layer.
4. Roast for 15 to 20 minutes, turning once, until the carrots are lightly browned and tender. Sprinkle with the orange zest, orange juice, and sea salt and toss well. Serve hot or at room temperature.
